Fantastic Orange Almond Cake
Preparation: 15 mins / Cooking: 45-50 mins / Serves: 8-10
Ingredients:
6 eggs
150g soft brown sugar
350g (peeled weight) carrots
2 teaspoons finely grated orange zest
350g ground almonds
2 teaspoons light olive oil
1 teaspoon pure icing sugar to serve
Method:
Preheat oven to 180�C for 15 minutes (160�C fan forced).
Place peeled, chopped carrots in 2L Saucepan with enough water to cover the carrots.
Cover with lid, cook for 10 mins. Drain.
In a medium bowl, beat the egg yolks and sugars until mixture becomes thick and creamy.
Stir carrot puree, almonds and zest into sugar mixture.
In a clean bowl beat egg whites with silicone whisk or an electric beater until at firm peak stage.
Gently mix a little of the whipped egg white in carrot mixture.
Add remaining beaten egg white and very gently stir through so as not to knock all the air from the whites.
Pour oil onto a piece of kitchen paper and wipe over inside base and sides of Saut� Pan.
Pour cake mixture into Saut� Pan and spread out evenly.
Bake for 40-45 minutes.
Run the Silicone Spatula around edge of cake to release it from the pan.
Chocolate and strawberries are always a great combination for hand feeding your love
Chocolate Cases with Strawberry Romanov
Makes: 12 / Prep: 25 mins Cooking: 12 mins (melting chocolate)
Ingredients:
350g dark chocolate or chocolate melts
300ml fresh cream
2 tablespoons icing sugar
2 punnets strawberries
1 teaspoon sugar
Method:
Melt the chocolate in the microwave, or in a bowl over hot water.
Place a teaspoonful of chocolate in each Flexibake case, and spread over the base and up the sides.
Place upside down on a cooling rack for a few minutes.
Turn upright and place on baking tray and refrigerate until set.
Gently pull sides of tartlet cases away from the chocolate.
When the sides are completely released, gently push the chocolate case out from the base of the Flexibake pan.
In a medium bowl, combine cream & icing sugar, and beat until soft peaks form.
Puree 1 punnet of strawberries with sugar. Fold puree into cream.
Hull and roughly chop the second punnet of strawberries, and gently fold into cream mixture.
Spoon into chocolate cases and garnish with extra strawberries if desired. Serve immediately.

Caramelised Figs with Maple Syrup
Preparation: 10 mins / Cooking: 5 mins
8 fresh ripe figs, halved lengthways
Ingredients:
2 tablespoons maple syrup
250ml maple syrup for serving
dusting of icing sugar
ice cream (optional)
Method:
Heat frypan over medium-high heat for 3 minutes.
Add 2 tablespoons of maple syrup and place fig halves flesh side down into syrup.
Cook figs for 5 minutes or until they are warmed through and caramelised on flesh side.
Serve with pancakes, extra maple syrup and ice cream (if desired) and dust with icing sugar.
